Scalloped Potatoes

Add bread crumbs or crushed butter crackers in the last 5 minutes of baking for a crunchy topping.

1/4 cup margarine

3 tablespoons flour

1 teaspoon salt

Dash pepper

3 cups milk

6 potatoes, peeled and thinly sliced

Preheat oven to 325°F. In a large saucepan over medium heat, melt margarine and whisk in flour, salt and pepper. When smooth, gradually add milk. Bring to a boil and stir constantly 3 minutes, until thickened. Place potato slices in a greased 9 x 9-inch baking dish. Add sauce and stir to coat. Cover and bake 30 minutes. Uncover and bake another 20 to 30 minutes, or until potatoes are tender.

Serves 4-6

Serve with summer squash or other in-season veggies.
