Overview

An African Bite celebrates the simplicity and authenticity of African food for a contemporary cook. Chef Daniel Mbombi has a deep connection to his Xitsonga culture and heritage, yet he is also a modern man living an urban lifestyle. An African Bite is Chef Mbombi’s tribute to the women who taught him to cook, from his grandmother and mother to the high-school economics teachers who made him realize how much he loved being in the kitchen, and that he could turn his passion into a career. The recipes include tripe, ox heart, goat meat stew, amathambo (meaty beef bones with pasta) and umleqwa, popular street foods like shisanyama, and chicken heads, feet and gizzards, vegetable sides like imifino (leafy greens), muboora (pumpkin leaves), umngqusho and jollof rice, and traditional drinks like umqombothi and amahewu.

About the Author

Daniel Mbonani Mbombi learnt to cook at high school before honing his skills at HTA Culinary School, from where he graduated in 2013 with a diploma in culinary arts. After a few years of corporate cheffing, he made the decision to start his own business, only to find his plans disrupted in March 2019, when the world went into Covid lockdown. However, his flair for innovation and creativity came to the rescue and he switched to making cooking demos for television and social media, private catering jobs, and recipe development for corporate clients. Chef Mbombi is deeply connected to his Xitsonga and Zulu heritage and his cooking reflects his respect for his African culture and tradition.
