Given the importance of food as nutrition, it would make sense for a book about the science behind food to emphasize or at least include good dietary practices. This book gives very brief coverage to some aspects of nutrition, such as the conversion of solar energy to food, and the fact that food contains nutrients, but emphasizes less scientific issues like being careful with sharp knives and eating food that tastes good. Some of the layout is not well thought out, such as a picture of cheeses on a page with the header "Fats" in bold letters. The "Meat and Beans" page shows a picture of sausages grilling, with a caution about the heat of a grill, but no mention that cured meats are best avoided, or that from a nutritional standpoint, charcoal grilling is not the cooking method of choice. The one recipe in the book is for ice cream flavored with candy. Another limitation of this book is that there seems to be a gap between the reading level of the audience, which is mid elementary school, and the sophistication of the scientific concepts and vocabulary presented, which is late elementary or middle school. (5) K-3 Science Behind series. Colorful photos and clear diagrams make this an eye-catching book, and the simple sentences are a laudable attempt at explaining how the human body uses food. But the information, though accurate, is frequently partial or correct for limited cases (e.g., "Pizza has them [the five types of nutrients] all!").
