I middelalderen gjennomgikk jordbruket mange endringer. Adelen og presteskapet ble ansett som de viktigste medlemmene i det føydale samfunnet. Imidlertid var de aldri flertall: I middelalderen var nesten alle mennesker bønder. Ikke alle bønder hadde samme kategori og sosial status. Mange av dem var frie menn. Blant disse var noen små grunneiere som bodde på sitt eget land, mens andre, nybyggerne, leide den føydale herren en liten tomt.
