Most of the research in the food industry on psychotrophic (cold- tolerant) bacteria has focused on food spoilage, but as the use of frozen and refrigerated foods grows, outbreaks of disease caused by such bacteria are becoming a concern as well. Kraft (food science and human nutrition, Iowa State U.) emphasizes the health hazard or potential danger from bacterial pathogens in foods held at low temperatures compared with food spoilage by psychotrophic bacteria such as off odors, flavors, or texture.
