Overview

Stories and Recipes from Bryan's Black Mountain Barbecue is more than a cookbook, it's a recipe of one chef's life, Chef Bryan Dooley. Get to know Chef Dooley through his incredible memories of cooking with the family as a child to his now famous Bryan's Black Mountain Barbecue. Chef Dooley's stories and recipes from Bryan's Black Mountain Barbecue and even some of his poetry works will envelop you, like the billowing plumes of pecan wood smoke carried through the air from the smoker.

"Once we had the pit built, the next step was to collect the Hickory from the woods around their house. My job every summer was to follow in their footsteps, collect the wood, hunt, fish and then sit back for some of my fondest memories." —Chef Bryan Dooley

Chef Dooley gained his knowledge and training from the Culinary Institute of America in Hyde Park, NY.
