Overview

I love to cook! So, when my family refused to do anything unless I could make the food taste great and they got desserts, the challenge was on. Like many of you, I started by looking at the low carb cookbooks that are on the market. And, much to my dismay, I found that most of them werent very low carb at all! If I did happen to stumble upon a few recipes, they were either very expensive to make and required ingredients that were difficult to find or I would look at the recipe and say to myself Who would eat this? So, I decided to write a cookbook as a companion for The Complete Diabetes Handbook with recipes that truly are low carb (15 g of net carbs or less per serving) and that use ingredients that can be found in almost any major grocery store.

Starting today, you can eat real, wholesome, and delicious food that really are low carb. No more cooking two different meals and no more wild fluctuations in your blood sugars.

About the Author

I am a nuclear medicine technologist and studied (minored in) biochemistry and pharmacology. As a nuclear medicine technologist, my job, in a nutshell, consists of watching how your body metabolizes nutrients. The majority of the patients I see every day have diabetes.

But, on a more personal level, both my mother and husband have diabetes. My mother, who lives with me, has type 2 diabetes and was converted from oral medications to insulin after having a small stroke. My husband is a type 1 diabetic. Also, I was the primary caregiver to my grandmother after she became a "brittle diabetic." I saw first hand how the conventional treatment caused her to lose her eyesight and end up on dialysis, even though we followed the instructions we were given to the letter.

For over 15 years, I have tried to learn everything I can about this disease. I have made it my mission to be as well-informed as possible about everything concerning diabetes to help my family and you to understand the disease better and control blood sugar levels. The doctors are amazed with my result.
