Overview

Hal Tartar was an estate manager in Palm Beach, Florida, for many years. He met residents and their cooks and housekeepers, too. Hal was always interested in cooking, and so he asked a lot of questions. He discovered the healthy residents ate plenty of vegetables, plenty of fresh fruits, and some protein and carbs. Hal decided to apply that way of eating to himself because he was about twenty-five pounds overweight, and so he created The Palm Beach Lifestyle Diet. The diet is based on the principle that one meal can consist of vegetables and another meal can consist of fruit. The first two weeks of the diet are crucial. After that, a lot of flexibility applies. This book contains unusual and delicious recipes and many wonderful tips. The emphasis is on healthy eating with weight loss as a bonus. There is no exercising and no calorie counting.

Hal Tartar devised this diet when he found that he was 25 lbs. overweight, and made up his mind
to do something about it !!!

He decided to eat only the way that dietitians and nutritionists recommend. That is, plenty of vegetables, plenty of fresh fruits, and some protein and carbs.

On Jan 1st of last year (2007) he weighed 205 lbs. At his height of 5’ 10”, that was too much.
In three months of eating this way, he was down to 180 lbs and still is.
He is now a fit 89-year old, who still works at his trade, as a locksmith.
He lives in West Palm Beach, Florida with his wife, Kathleen, who is a Florida native, having been born in Miami. Hal was raised in Atlantic City, NJ and moved to Florida in 1971.

He is a veteran of World War II, having served as a 2nd Lt. platoon leader in Europe.
Currently he volunteers at the VA Hospital repairing the donated computers that are loaned to veterans after they show that they can operate a computer by taking a free course at the hospital.

Kathleen contributed a great deal to this book. She tested the recipes in her kitchen.
